Potatoes with Peppers (Rogini Aloo Cap)

A simple vegetable dish using potatoes and peppers, as well as the wonderful spices of our Rogan Josh Spice Paste. I've added extra spices such as cumin, ginger and chilli to really bring out those spicy flavours and give this dish a bit of a kick.

Ingredients

Serves 4 people

  • 1 tbsp vegetable oil
  • 2 baking potatoes, cleaned and diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 tsp cumin seeds
  • 1/2 tsp ginger, chopped
  • 1 tsp garlic, chopped
  • 1/2 green chilli (optional)
  • 2 tbsp Patak's Rogan Josh Spice Paste
  • Juice of 1/2 lemon
  • 1 tbsp coriander leaves
  • Salt, to taste

Method

  1. Heat the oil in a pan on a medium flame and add the cumin seeds. Heat until they crackle. Add the ginger, garlic and green chilli (if using) and cook for 1 minute.
  2. Add the Patak's Rogan Josh Spice Paste and stir well. Sprinkle in a little water.
  3. Add the potatoes and some water, mix well and leave to simmer until the potatoes are almost cooked through.
  4. Add the peppers and cook for a few more minutes.
  5. Adjust the seasoning if necessary, add the lemon juice and garnish with the coriander leaves. Serve alongside your favourite rice dish, such as Cumin and Pea Pulav.
