Malaysian-Indian fusion for tonight's dinner. Nasi Lemak with Tikka Masala roast chicken, sliced cucumber, hard boiled egg, sambal ikan bilis and fried dried anchovies. I'm using Patak's Tikka Masala Paste Pots courtesy of Patak's UK (thank you @pataksuk) for the roast chicken. These pots are made up of Patak's award winning Spice Pastes, just in handy portion sizes - perfect for when you want big Indian flavour, fast ❤ . 1kg chicken pieces Patak’s Tikka Masala Paste Pot (70g) 4 garlic cloves, ground into paste 2 inch ginger, ground into paste 1 cup yogurt 1/2 chicken stock cube . 1.Mix all the ingredients with the chicken in a bowl. Cover with cling film and chill for at least 2 hours (preferably overnight). This can be done up to a day in advance . 2. Paneer tikka masala made up with @pataksuk Tikka Masala PASTE POTS. 4 step and its ready. . 1. Heat 1 tsb oil in pan and add diced onion, gently fry until soft. 2. Add 1 paste pot and water and cook. 3. Add fried paneer. Cook for few minute. 4. Then add tomato paste. Add more water if you want. Add double cream and finally sprinkle some coriander. . Its ready. So I had some leftover turkey and carrots from Christmas Day. My first thought was to make a traditional turkey pie.. but I wanted to make something a bit different and special to vamp up that left over turkey meat. I used @pataksuk new Korma Paste Pot and made the most amazing turkey and carrot Korma pie topped with a layer of puff pastry. I added homemade turkey stock and natural yoghurt and the end combination was incredible!! My husband doesn’t like the traditional turkey but he loved this pie, it takes pies to a whole new level with the @pataksuk new Korma Paste Pot! #ChickenKoftaCurry - 🍅🌶🍗🥘 . ➰ The nice guys over at @pataksuk sent me some of their paste pots to try it out, I’ve been meaning to make something but had no idea what. This recipes uses the Tikka Masala paste. Long time followers will know I’m not a simple few ingredients cook, so I didn’t follow the instructions on the pot instead I used it as a quick flavour boost. It was really tasty! Will definitely be making again. Meatballs were cooked the night before to make life easier (thanks to mum 😄👍) As always use the recipe as a guideline, if you don’t have some spices just skip it and adjust to how much you are making! . ➰ Meatballs - 1.5kg chicken mince. 1.5 tbsp finely chopped green chillis, 2 large grated onion, 2-3 tbsp finely chopped coriander, spices . ➰ Spices - 2 tsp chilli, 1.5 tsp salt, 1 tsp x pepper, chilli flakes, smoked paprika, ginger powder, garlic powder, onion granules, curry powder, cumin, coriander powder, garam masala powder, turmeric . ➰ Masala - 4 green chillis, loads of finely sliced caramelised onions, 2 large minced garlic cloves, 3 bay leaves, 1 stick of cinnamon, 5 green cardamom, 1 black cardamom, 4 cloves, 1 can of chopped tomatoes, large handful of fresh cherry tomatoes, 1 tbsp of curry powder, 1 tbsp smoked paprika, 2 x Pataks tikka masala paste pots! finish with fresh coriander leaves and dried fenugreek leaves. cook the tomatoes low and slow and add water also to make a nice sauce . TIP: if you find using canned tomatoes too acidic add a pinch of baking powder at the end, makes a big difference . Note: to make a really nice masala you have to put the time in so maybe save this recipe for a weekend. 🙏
